The Sublimotion restaurant is known as “the most avant-garde restaurant in the world”, but it is much more than that. Sublimotion is a new restaurant concept, the first gastronomic performance created to enhance the pleasure of sitting down to eat around a table. The restaurant, located in the Hard Rock Ibiza Hotel, offers an exclusive and innovative experience for 12 diners every night. A new performing art which aims to join gourmet cuisine with technology and staging, capable to turn the table into a stage and the diner into a star. Thanks to the latest technology, the diner will be able to travel to a dozen different places without leaving his or her seat and enjoy a combination of sound, light, projected images, and amazing scenes. A trip in time and space that can only be explained by experiencing it first-hand.

The Situation

The COVID-19 global pandemic was a turning point for the hospitality sector. All Spanish restaurants were forced to close their doors in March 2020 when the government declared a state of emergency in the country. A few months later, when they were finally allowed to reopen their doors, it soon became clear that indoor hospitality settings were the perfect environment for the spread of an airborne virus such as COVID and were in a critical situation in terms of being able to continue offering their usual services.
Sublimotion Ibiza contacted Camfil in search of a solution that would allow them to maintain the highest safety level for their clients and employees regarding air quality. The seamless and invisible integration of any equipment was key to this project.
Sublimotion’s main dining room is an area packed with audio-visual technology with the specific purpose of providing an uninterrupted audio-visual experience. In this project, it was essential that any equipment being installed did not stand out visually, whilst protecting people and guaranteeing the effective removal of microbial contamination such as viruses from the air in a discreet manner. The effective elimination of the airborne threat posed by COVID-19 was a key requirement as part of a strict Anti-Covid measures programme, designed to maintain the level of exclusivity, safety and high quality that Sublimotion provides to all its clients.

THE SOLUTION

Camfil Spain carried out a study for each of the restaurant’s rooms, calculating occupancy and the surface area per room. The proposed solution was to install ‘CC400 Concealed’ air purifiers, specially designed for installation in existing ducts and equipped with HEPA H14 filters, and without carbon (which is used for molecular filtration) since the smelling experience was key to Sublimotion. This parameter (smell) could not be altered.
To allow automatic control of the air purifiers, an AirImage indoor air quality sensor was installed to measure PM1, PM2.5 particles, humidity (RH) and temperature in real time. The indoor air quality
conditions monitored by the AirImage device allow the air purifier speed to be automatically adjusted, ensuring the clean air delivery rates (CADR) are appropriate to maintain the required air quality.
This information was also fed to a dedicated web page developed by Camfil where diners could visually confirm the restaurant’s air quality in real time.
